Hey there! HAPPY VALENTINE’S DAY!! I’m pretty excited because this is my very first post and what better than to have it be something that’s totally delicious and my favorite color, pink?!? So I’m sharing with you these heart shaped almond shortbread cookies that are dipped in chocolate, and then topped with a strawberry drizzle. Very yummy!
As you can probably tell, I’m not that great of a picture taker and I don’t have a fancy camera, but I hope that doesn’t ever discourage you from trying them yourself! Always feel free to comment and let me know what you think! Have a wonderful day

FOR COOKIES:
- 2 sticks unsalted butter, softened
- 1 cup confectioner’s sugar
- 1 egg
- 1 tsp almond extract
- 2 1/2 cups flour
- 1 tsp salt
DIRECTIONS:
Cream butter and sugar. Add egg and blend well. Add extract and blend. Mix flour and salt and gradually add. Cover dough with plastic wrap (we usually put ours in a gallon size Ziploc bag) and chill dough for about 2 hours. Working with about 1/3 of the batch at a time, briefly knead the chilled dough and roll about 1/8 inch to 1/4 inch thick. Cut out shapes. Bake cut out cookies on parchment lined cookie sheets at 375 for 12-14 minutes.
You can also freeze the dough. After mixing, put dough in a gallon size Freezer ziploc bag (or wrap well) and freeze. Thaw overnight or for at least a few hours in the refrigerator in the ziploc bag. If too chilled to handle, let sit at room temperature for about 1/2 hour to 1 hour until it’s workable. Chilled is good, though, don’t let it get too warm and soft.
FOR CHOCOLATE:
- 1 cup semisweet chocolate chips
- 2 teaspoons shortening
In a small bowl, combine ingredients and microwave for 1 to 1 1/2 minutes or until melted. Stir well. Dip half of each cookie in chocolate and place on waxed paper to dry.
FOR STRAWBERRY DRIZZLE:
- 1 cup confectioners’ sugar
- 1 Tablespoon milk
- 4 teaspoons strawberry jam
- 1/4 tsp almond extract
- A few drops red food coloring
Combine all ingredients in a bowl and mix well. Drizzle over chocolate side of cookies or over the whole cookie if you want! Enjoy!
